Tofu Making Tips/自做豆腐的补充

Besides using lemon juice as coagulant, you can use Apple Cidar Vinegar as coagulant. Here are tips for using Apple Cidar Vinegar (called Vinegar):

1) Deluted Vinegar is much easier to controll tofu coagulating process

2) Apple cidar vinegar can make tofu firmer than lemon jiuce as coagulant

3) Add 1 Tablespoon apple cidar vinegar to 1 cup of water for 1 cup dried soy bean

4) To avoid adding too much vinegar, make sure to add the deluted vinegar to soy milk slowly with sligh stir.

Tofu may tasted better with lemon juice as coagulant
